Pecan Shortbread Cookies

This is a great, simple recipe from Elana's Pantry's website. These cookies are great dipped in coffee, almond milk, or just straight up plain. Their mild but nutty flavor make them great for topping with jams, spreads, and frostings!

Pecan Shortbread Cookies  Ingredients  -2½ cups blanched almond flour -¼ teaspoon salt -1 teaspoon baking soda -1 cup pecans, toasted and chopped -5 tablespoons honey -½ cup salted butter, melted -1 tablespoon vanilla extract  Directions  1. In a large bowl combine almond flour, salt, baking soda, and pecans 2. In a small bowl, mix honey, butter, and vanilla 3. Mix wet ingredients into dry 4. Place dough in center of a piece of parchment paper 5. Form into a log approximately 2½-inches in diameter 6. Place in freezer for one hour, unwrap and cut into ⅛-inch thick slices 7. Place slices on a parchment paper lined baking sheet 8. Bake at 350°F until lightly golden, 7-10 minutes 9. Cool for 1 hour 10. Enjoy! Freeze to store.
