Fathead Dough

Fathead Dough

A world renowned recipe among the SCD and Paleo communities. It's also one of the most versatile recipes on the diet. This one is definitely a must have for any SCD participant's arsenal. I personally love the bagels you can make out of these. They taste a lot like the asiago cheese bagels you can get at a bagel shop. Or, you could ditch the spices and add a bit of honey for a sweeter bagel.

SCD Fathead Dough  Ingredients  -1 1/2 cups shredded Monterey Jack cheese -3/4 cup almond flour -2 tablespoons of dry curd cottage cheese or dripped SCD yogurt -1 egg, beaten -garlic powder, onion powder, or whatever herbs you like (to taste)  Directions  1. Preheat oven to 400 degrees. 2. Put jack cheese and dry curd cheese/dripped yogurt in a microwave safe, medium bowl 3. Microwave for 1 min, stir and then another 30 seconds, stir 4. Stir in egg and almond flour 5. Roll the dough into a long snake and put on parchment paper. 6. cut into six lengths for bagels and put into a greased doughnut pan. 7. Put into 400 degree oven 8. Bake for 12-15 minutes until golden brown.  Variations: This dough makes awesome pizza and hot pockets/calzones that you can fill with hamburger meat and cheese, pepperoni and spaghetti sauce, etc.
