Pigs in a Blanket

Pigs in a Blanket

Another awesome party food. I always loved these at cookouts, football watch parties, and tailgates. With the assistance of Lois Lang's light and buttery bread, I've been able to figure out a great SCD version of pigs in a blanket with the same taste as the originals. Just be careful with these, that bread won't hold together as well due to the absence of gluten. So, I'd eat these with your hands. Great when dipped in yellow mustard, if you're into that.

INGREDIENTS -1 recipe of dough from Lois Lang's Lucious Bread , (from Breaking the Vicious Cycle) -1 package legal hot dogs (order from The Piggery, or Pederson's. Applegate Farms also has a legal hot dog) -Mini muffin tin DIRECTIONS 1. Preheat the oven to 350. 2. Grease the muffin tins with some canola oil or butter. 3. With a small cookie scoop, put blobs of dough in the mini muffin tin.  4. Cut the hot dogs into lengths of an inch or so, and press the standing up  into the dough . 5. Bake for 12 minutes or so, until the dough has puffed and is lightly browned. 6. Serve some legal yellow mustard on the side and enjoy!
