Broccoli Cheese Casserole

Broccoli Cheese Casserole

Comfort food at its finest. There are only a handful of recipes that I constantly make on the SCD that are in the fridge at all times, and this is one of them. I am a HUGE broccoli fan, and as you know cheese and broccoli is a great combo. The use of cashew cream in this recipe gives the casseroles a nice creamy texture. I love putting a few dashes of Frank's Red Hot sauce to give it a little kick as well!

Broccoli Casserole  Ingredients   cashew cream  (1 to 2 cups, depending on how creamy you want it) broccoli florets from 2 bunches 8 oz to 1 lb cheddar cheese, grated salt and pepper chicken stock (if needed)  Directions  Preheat oven to 350 degrees.  -Steam broccoli until it’s tender. -Cut the broccoli into smaller pieces and put into a large bowl. -Add grated cheddar, cashew cream, salt and pepper to taste--start with 1 cup cheese and 1 cup cashew cream -Stir everything together very well.  We bake these in individual serving dishes (ramekins), but you could make one big one.  Bake until the sauce is bubbly and cheese is melted. Serve, or let them cool, wrap in plastic wrap and freeze to eat later.
