Gummy Bears

For years, my go to candy was gummy bears. But I didn't care about the shape. Bears, worms, sharks, frogs, noodles, as along as it was made of gummy, I wanted it. I used to ride my bike up to the candy shop every weekend to get myself some. My favorite brand by far was Haribo. After months of experimentation to try to find an SCD alternative to these firm and chewy bears, I have finally cracked the code.

SCD Gummy Bears  Ingredients  3 oz legal freeze dried fruit of choice 4 envelops Knox brand unflavored gelatin 1/4 TSP ascorbic acid (increase as you like for more sour candies) 1/3 cup honey 1/3 cup legal fruit juice of choice  Directions  1. blend the freeze dried fruit in a spice blender or small low powered blender. 2. Combine the fruit powder, unflavored gelatin and ascorbic acid in a medium microwave-safe bowl and stir to combine. 3. Add the honey and water, and stir gently with a soup spoon until all of the ingredients are blended together. Let the mixture sit for 5 minutes so that the gelatin can bloom. 4. Stir the candy syrup gently again, then microwave it on high for 30 seconds. Stir it again, then microwave again for another 15 seconds. Repeat heating it for 15 seconds 3 more times for a total heating time of 1.5 minutes. If air bubbles begin to form on the surface of the gelatin, stop heating and stir gently. Let the mixture sit for 10 minutes. Give the solution a gentle stir every couple of minutes while it cools. 5. Pour the syrup into a mold of your choosing. Let sit in room temp for 30 minutes, then refrigerate for 30 minutes. 6. once firm, remove the gummies from the mold and stand upright on a cookie sheet for 48 ours, so that the bears will dehydrate and develop a nice firm, chewy texture. These are worth the wait.
