Elvis Ice Cream

Ice cream is the gold standard of frozen desserts in America, and one of my personal favorites. So I was pretty bummed that ice cream isn't allowed on the SCD due to its high sugar and dairy content. However, after much experimentation, I've decided that frozen bananas are a great base for ice cream. Here's a legendary combination adored by a legendary rockstar.

Elvis Ice Cream (serves 1-2)  1 frozen ripe banana (sliced) 1 heaping Tbs legal nut butter (stay away from peanut butter until you've had a successful 3 months on the diet) 1 Tbs honey 1/2 Tsp legal vanilla extract pinch of salt  Instructions  Put all ingredients into food processor and blend until uniform and smooth. Then pour into bowl and place in freezer (1 hour for a soft-served texture, 3 hours for a more traditional ice cream texture). Enjoy!
