Jim's Fluffy Pancakes

Before Crohn's, pancakes were one of my all time favorite breakfast foods. Nothing beat a nice stack of hot pancakes with syrup at the diner on Saturday morning. In the early days of the diet, my mom stumbled across this recipe from www.nomorecrohns.com. It makes these little circles of joy that have been an (almost) everyday staple of my breakfast since then. It really does taste like the real thing. Just use a honey syrup instead of maple :)

Jim's Fluffy Pancakes  2-1/2 cups almond flour 7 large eggs 8 Tbs honey 2 Tbs vanilla 1/2 Tsp salt 1/2 Tsp fresh baking soda 2 Tbs real butter  Instructions  Mix all ingredients together in blender until uniform. Poor batter onto an oiled griddle that is between 275 and 300 degrees. Cook slowly on each side until golden brown. Enjoy!  Tip: Don't make these too big. Almond flour doesn't hold together as well as regular flour, so make these about 4 or 5 inches wide.

2-1/2 cups almond flour

2 Tbs vanilla
1/2 Tsp salt
1/2 Tsp fresh baking soda
2 Tbs real butter
